Carrot Date Slaw with Hot Madras Curry Dressing

I absolutely love Carrot Slaw, Carrot Salad or basically anything with Carrots. This particular Carrot Slaw gets the added sweetness of plump Medjool Dates and an exotic twist with the Hot Madras Curry Dressing. It comes together quickly and is perfect for picnics, a cookout or BBQ! This Carrot Slaw is best eaten the day that it’s made, but is still delicious a few days later.

Serves 4

Ingredients:

  • 7-8 {435 g.} organic carrots washed, peeled and grated on the large holes of a box grater
  • 6 Rancho Meladuco Medjool Dates {115 g.} Pitted & chopped
  • 1/4 cup {55 g.} mayonnaise
  • 2 teaspoons fresh lime juice
  • 1/4 teaspoon hot Madras Curry Powder
  • 2 teaspoons sugar
  • pinch of kosher salt
  • 2 tablespoons chopped cilantro
  • 2 tablespoons {18 g.} toasted sesame seeds

Wash and peel carrots, grate them on a box cutter and place in medium bowl. Add the chopped dates to the carrots and set aside. Make the dressing. In a small bowl, whisk the mayonnaise, lime juice, curry powder, sugar & salt. Pour the dressing over the carrots & dates and with a spatula stir till coated. Fold in the cilantro and sesame seeds and adjust seasoning to taste. Store in a jar with tight fitted lid or container in refrigerator up to three days.
